My name is Quinton Marcum, I am in my first year as chairman of the Little Egypt CEO Program. I am in my second year as the principal of Odin Public School. I live in Centralia Illinois and was a history teacher at CHS for 13 years previous to my administrative tenure. I enjoy spending time with my family as well as being outdoors. I really believe in the mission of the CEO program and its ability to change students' lives for the better.
Aaron is an Air Force brat who grew up living in several places in the United States. He met his wife, Julie, while they were both living in the St. Louis area. After getting married in 2005 and having their first child, they decided to move back to Julie’s hometown—Centralia, so that Aaron could become the kitchen manager -and later assistant manager- at Applebee’s in Mt. Vernon, and later Salem. After the birth of their second son in 2008, Aaron decided to get out of the restaurant business to go back to an 8-5 job. Feeling the tug of his love of cooking Baldy’s was formed in 2019 (His wife Julie formed the LLC for him as a birthday present and a “gentle” nudge to get going). After a slow start, the business gained momentum coming out of the lockdown in the summer of 2020 and have continued to grow and prosper. Aaron left his day job permanently in late 2020 to focus on the business full time. Baldy’s looks to move forward providing great food for great people with passion and love.
Here’s a quote from Baldy himself, “From an early age I have always enjoyed the great smells and tastes from great food made with love and soul. Through many samplings-as you can tell from my robust figure (#nevertrustaskinnychef)- I knew I could provide the same things I have experienced (but better)! I have learned the skills and knowledge from restaurants and chef friends and now the time has come to let the love and soul of my cooking shine through (as bright as my shiny bald head)!”
I am excited to be a part of the Little Egypt CEO Board. In my position at Kaskaskia College I work closely with our area High Schools to help students navigate their futures and it is exciting to see a program that allows students to gain real life experience. I was born and raised in Salem and apprciate that the CEO program allows students to see opportunites avaliable to them locally!
Outside of work, you will more than likely find me at an area school gym with my husband watching one of our two children play basketball.
